Name :Eggplant Sauce (Uukkous Al- Badinjan)

Discription:Served with rice dishes. Great with Muaddas (above recipe)

Sevings:

Ingredients:

2 eggplants , about 1/2 pound each

4 large cloves of garlic

salt

2 T olive oil

1/4 t hot chili pepper

1 t paprika

Instructions:

Pre-heat oven to 350 degrees.

Bake the eggplants on a baking sheet for 30 minutes, until soft. Using a mortar crush together salt and garlic. After the eggplants are very soft peel off the skin while still hot and put the flesh in a small bowl. Chop this into pieces and mash with a fork. Stir in the crushed garlic and salt, chili pepper , oil and the paprika. Adjust salt to taste.
